
Ingredients
400gm can four bean mix (drained and washed)
1 cup of raw grated sweet potato
1 small red onion grated
½ tsp quality salt flakes
2 tbsp bread crumbs
¼ cup of chopped walnuts
1 cup panko bread crumbs (for crumbing)
2-4 tbsp of oil for frying
Sweet Chilli Sauce
1 tbsp sweet chilli sauce
3 tbsp of vegan mayonnaise
Sanga
1 sourdough loaf or bread of your choice
Lettuce, tomato, carrot
1 fresh whole garlic clove peeled to rub on your bread (optional)
Preparation
Grab a plate or dish with a slight lip on it and put your coating panko bread crumbs in the dish, getting it ready for crumbing.
Using a stick blender or your food processor to blend your beans, sweet potato and onion until its a paste (should take about 90sec!)
Add in your salt. chopped walnuts and 2tbsp of bread crumbs. Mix well.
You will find your mix a little mushier then a normal meat patties.
Divide the mix into three equal parts and roll into a large ball.
Place the ball in the palm of your hand which is cupped around the patty and slightly flatten down.
You will have quite a thick round patty with a flat top for frying.
Now coat in with your bread crumbs.
Set in the fridge for 30min.
Get a small bowl and pop your mayonnaise and sweet chilli sauce and mix together. Set aside in the fridge.
Grab a large fry pan and heat your pan and 1-2 tbsp of the oil on a medium high heat.
Pop your burger patties in and cook until golden brown on one side and turn over to the other side, turning the heat down to a medium/low.
Once your second side is cooked use a egg flipper to gently take them out and drain them on a paper towel.
Now slice up your sough dough, lightly toast and rub a peeled fresh garlic clove over the bread.
Releasing some oils and giving your bread a yummy garlicky subtle aroma and taste.
Lay your first piece of bread down and layer with mayonnaise, lettuce, tomato and carrot.
Now put your burger patty on and top with a little sweet chilli sauce to finish it off.
Top with your second piece of sough dough to make your wicked burger which is technically a sandwich! Serve on its on or some home made crinkle cut chips with a bit of extra sweet chilli mayo on the side.
