Spicy Cherry Compote

Ingredients

  • 500 g cherries (frozen or fresh, pitted) 

  • ¼ cup brown sugar 

  • 2 whole cloves 

  • 6 cardamon pods bruised 

  • 1 cinnamon quill 

  • 1 vanilla bean, split and scrapped 

  • 1 orange 

  • 120 g blackberries

Preparation

  1. Pop the cherries in a medium-size saucepan and add the brown sugar, cloves, cardamom pods, cinnamon quill, vanilla bean seeds and pod. Using a vegetable peeler, peel off two rind curls from the orange and add them to the saucepan along with the juice from the orange. 

  2. Heat the saucepan over medium heat and simmer the cherries for 8-10 minutes. If the liquid reduces down too much you can always add some more (You want to have them a little syrupy). Remove from the heat and stir in the blackberries. 

  3. Serve cool or warm with my Fallen Pancakes or simply with granola and Greek yoghurt. Enjoy!
