Salmon and Brown Rice Salad

Ingredients

  • 1 packet of Tassal Salmon Infusions Lemon 

  • 1 cup cooked brown rice 

  • ½ red capsicum, finely diced 

  • 2 spring onion, finely sliced 

  • 1 sheet of nori (seaweed), finely shredded 

  • 1 avocado, halved and skin removed 

  • Pickled ginger 

  • 1 tablespoon furikake (sushi rice seasoning, found in the Asian aisle of your supermarket)


Miso Dressing 

  • 2 tablespoons white (Shiro) miso 

  • 1 teaspoon Dijon mustard 

  • 1 tablespoon organic raw apple cider vinegar 

  • 1 teaspoon extra virgin olive oil 

  • 1 teaspoon rice malt syrup 

Preparation

  1. Prepare Tassal Salmon Infusions Lemon following packet instructions. Meanwhile, combine all the dressing ingredients into a small bowl and give it a mix. Set aside. 

  2. Grab a medium-size bowl and add the cooked brown rice, red capsicum, spring onion, shredded nori and half the miso dressing. Give it all a good mix until it’s well combined. 

  3. Divide the rice between two shallow serving bowls and carefully place on the Tassal Salmon Infusions Lemon, avocado halves, pickled ginger, and a good sprinkling of furikake. Finally, drizzle over the remaining miso dressing. Enjoy!
