Poached Eggs with Smoked Salmon

Ingredients

  • 1-2 eggs 

  • 50 g smoked salmon 

  • 1 slice of bread (grain, wholemeal or gluten-free) 

  • 1 teaspoon finely chopped fresh dill or chives 

  • 1 teaspoon white vinegar 

  • Salt and pepper to taste 

Preparation

  1. Prepare a small saucepan filled halfway with water, add vinegar. Bring to the boil then carefully drop the eggs into the water. Reduce heat and allow to simmer for 2-3 minutes before removing them from the water and set aside. 

  2. Meanwhile, toast one slice of bread and place the 50g of smoked salmon on the top. Place the cooked poached eggs on top of the salmon, season with salt and pepper. To serve, sprinkle with fresh herbs.
