Niçoise Salad

Ingredients

  • 1 small can of tuna in spring water, drained

  • 4 cherry tomatoes, halved

  • 1 cup green beans, blanched and cooled

  • 3 cos lettuce leaves

  • 4-5 pitted olives

  • 1 hardboiled egg, halved


DRESSING

  • 1 teaspoon red wine vinegar

  • 1 teaspoon mustard

  • 1 teaspoon extra virgin olive oil

Preparation

  1. Prepare the dressing by mixing together the red wine vinegar, mustard and oil in a salad bowl. 

  2. Throw in the tuna (or Chicken), tomatoes, beans, lettuce, and olives and give it a good toss with your hands. Top with the boiled egg and serve.
