Ingredients

  • 1 - 2 eggs 

  • 50 g canned beans (cannellini or black beans), drained 

  • 1 tablespoon extra-virgin olive oil 

  • ½ garlic clove, finely chopped 

  • 1 large tomato, chopped 

  • ½ cup water 

  • 1 teaspoon paprika 

  • ½ teaspoon ground cumin 

  • salt and pepper 

  • 1 tablespoon cottage cheese 

  • 1 wholemeal wrap, warmed 

  • Coriander sprigs 

  • Red Chilli, finely sliced (Optional) 

  • Lime wedge (Optional) 

Preparation

  1. Heat the oil in a pan over medium heat and throw in the garlic.  

  2. Once the garlic sizzles, add the chopped tomato, water, paprika, cumin, and a pinch of salt, simmer for 5 minutes and begin to mash.  

  3. Add the beans into the pan and allow the sauce to thicken. Stir through the cottage cheese and remove from the heat. 

  4. Meanwhile, scramble the eggs and warm the wrap. Once the eggs are cooked to your liking, remove them from the heat. 

  5. Top the wrap with the scrambled eggs, tomato mixture, coriander, chilli and a squeeze of lime. Fold the wrap gently and serve.
