
Ingredients
200 g Double Brie wheel
1 garlic clove, thinly sliced
¼ cup dried apricots
¼ cup walnuts
Preparation
Preheat oven to 180°C. Place some baking paper onto a small cast iron pan or any small ovenproof dish you have. Place the unwrapped brie wheel into the prepared pan and start to slit the top of the brie. Insert a slice of garlic into each slit, then place the pan into the oven and cook for 15-20 minutes or until slightly golden on top.
Meanwhile, place the dried apricots and walnuts into a food processor and blitz until it resembles a crumb. If you don’t have a food processor, then do it the old fashion way with a chopping board and sharp knife. Place in a little serving dish.
To serve, cut a wedge from the brie and watch to see all that yummy goodness ooze out. Serve with a fresh baguette and the apricot and walnut crumb.
